Short description
This standard provides information on the cleaning of exhaust air systems in commercial kitchens and associated areas. These are special rooms where food is prepared, served and distributed, dishes and appliances are rinsed and food is stored. Cleaning methods and agents must be used in such a way that safe and economical operation is permanently guaranteed with regard to fire protection, hygiene and energy saving. Aspects of occupational safety are also listed for the various cleaning processes. The target groups for this standard are planners, manufacturers, installers, operators, facility management, maintenance and cleaning companies.
