Overview

The standard has been prepared by Working Committee NA 057-01-01 AA "Sensorik" ("Sensory analysis") of the DIN Standards Committee Food and Agricultural Products (NAL). The previous standard originates from the year 1996. It was therefore decided to adapt the technical contents and the cited standards to the newest state of the art. A further part of the revision was expansion of the lists of descriptive attributes. The document contains procedures for the verbal description of characteristics or attributes of one or more test specimens. The procedure is applicable for determination of factors influencing production, characterization of product standards, as the basis for preparing specific evaluation schemes (profile testing, descriptive testing with subsequent quality assessment) and for training sensory assessors. The characteristics or attributes of one or more test specimens are described with expressions which can either be freely selected or taken from specified lists. Information regarding intensity may be supplemented as required. Only trained sensory assessors are eligible for simple descriptive testing. They separately describe each test specimen. For tests with several test specimens the sensory assessors evaluate the test specimens in arbitrary order or in accordance with a test plan. Depending on the type of test specimen either all of the test criteria of a test specimen or individual test criteria of all test specimens are evaluated and/or assessed. The substantially expanded list with examples of attributes has been incorporated into Annex A. As a supplement this Annex A has a newly prepared list of the corresponding reference substances, including the respective CAS numbers and recommendations regarding the preparation of the corresponding test solutions (suitable solvent and concentration). An example of a test form is provided in Annex B.
