This standard is directed at mass catering facilities and specifies requirements for the planning and construction, as well as the operation of these facilities. DIN 10506 is generally formulated for all areas of mass catering and forms a basis which finds different applications under consideration of the specific features of the company centres. Users of the standard are mass catering facilities such as, for instance, university cafeterias, canteens, cafeterias, as well as kitchens and food service areas in hospitals, social facilities, rehabilitation facilities, schools, child care facilities, military barracks, and penal institutions as well as, if applicable, public houses and restaurants. It can also be consulted for non-commercial manufacture and distribution of foodstuffs (for instance, for church and society events, charitable events) as an orientation for planning and implementation. Manufacture, handling and dispense of food and beverages for private use are excluded. This basic standard is related to the European regulations on hygiene. It gives form to the requirements of the EU Hygiene Regulations (in particular Regulation (EC) No 852/2004) and the national food hygiene regulations (German Food Hygiene Regulations and Ordinance on hygienic requirements for foodstuff of animal origin (Lebensmittelhygiene-Verordnung LMHV and Tier-LMHV)). DIN 10506 serves as an orientation and has the aim to facilitate compliance with satisfactory hygiene conditions during handling of foodstuffs in mass catering, in order to ensure the protection of the consumer from health hazards. Furthermore, the standard provides information for the hygienic handling of foodstuffs and restrictions for the manufacture and dispense of foodstuffs to certain groups of people in mass catering.
