Overview

This International Standard specifies sampling techniques within the primary food-animal production stage, for detection or enumeration of viable microorganisms with particular reference to food-borne pathogens. This standard is not intended for use in diagnosis of animal disease. The standard deals in particular with aspects of health-related consumer protection and (product) safety. On the EU-level, salmonellosis is considered as one of the zoonoses with the highest priority. There are numerous legal control strategies for agents from livestock farming which are passed over to the human. Livestock farming and primary producers are of central importance regarding the control strategies. The primary producer has the obligation and the opportunity to independently contribute to the prevention of the entry of the zoonotic agents into the food chain. Application of a hardly time-consuming sampling concept tested regarding effectiveness in combination with sensitive detection methods for the relevant agents has become urgent. This International Standard which is now available meets this requirement. It specifies sampling techniques for all possible areas of primary production in question. The committee responsible for this standard is NA 057-01-06-22 AK "Primärproduktion" ("Primary Production Stage") at DIN.
