One main aspect for the operation of beverage dispensing systems and the dispense of beverages in order to protect the user from health risks is hygiene. Therefore it is necessary to clean glasses so that they are hygienically flawless. Here, the type, frequency and quality of glass cleaning are especially decisive. The standard DIN 6653-3 specifies technical and hygienic requirements for the construction as well as the operation of manual glasswashing apparatuses for cleaning of serving measures, used for beverage dispensing systems. At the same time, microbiological criteria for cleaning glasses are listed in the annex. The standard is primarily directed at manufacturers of glass scrubbing devices and operators of mass catering installations which dispense beverages. The standard serves the orientation and aims at facilitating the hygienic dispensing of beverages to the users. The use of suitable glass scrubbing devices and the hygienic cleaning of glasses allows meeting legal specifications regarding health-related consumer protection. The engineering standard is a part of the DIN 6653 standard series on beverage dispensing systems, which has been prepared by NA 012-00-04 GA "Gemeinschaftsarbeitsausschuss FNCA/NAL: Getränkeschankanlagen" ("Joint Working Committee FNCA/NAL Beverage dispensing systems"), which is formed by NA 012 of the Chemical Apparatus Standards Committee (FNCA) and NA 057 of the Food and Agricultural Products Standards Committee (NAL). The Committee responsible for this standard is NA 057-02-01 AA "Lebensmittelhygiene" ("Food hygiene") at DIN.
