This standard specifies hygiene requirements for the design and construction of refrigerated display cabinets for refrigerated foodstuffs as well as the necessary test methods to ensure proper handling of foodstuffs. The specifications refer to permanently installed equipment. Parts for single use and for disposal are excluded from the scope of this standard. One of the annexes simultaneously provides information about the proper handling of refrigerated display cabinets. The requirements contained in DIN 10501-2 specify more precisely the general legal provisions with regard to suitable materials as well as hygiene-compliant construction and design. Moreover, the standard contains provisions on the temperatures to be observed for refrigerated foodstuffs. The user information contained in the annex provides guidance for the setting up and operation of the display cabinets, for the cleaning and disinfection as well as care and maintenance in order to prevent an adverse effect on those mostly perishable foodstuffs. DIN 10501-2 provides, on the one hand, the manufacturers of display cabinets with guidance for the hygiene-compliant design of the refrigerated display cabinets for foodstuffs and is, on the other hand, intended for the orientation of the users, for example, the food industry, in order to comply with the legal provisions. The use of hygiene-compliant display cabinets in connection with proper handling facilitates compliance with satisfactory hygienic conditions during the handling of foodstuffs and thus serves the protection of the user against health dangers. This product standard, which deals in particular with health protection aspects, describes the technical prerequisites and the suitable handling of display cabinets for foodstuffs. The committee responsible for this standard is NA 057-02-01-21 AK "Verkaufsmöbel für Lebensmittel" ("Display cabinets for foodstuffs") of Working Committee NA 057-02-01 AA "Lebensmittelhygiene" ("Food hygiene") at DIN.
